My work focuses on uncovering the functional potential of natural bioactive compounds, always with a strong emphasis on applicability, innovation, and knowledge transfer. My scientific trajectory has been enriched through national and international research stays at institutions such as the Université du Luxembourg, University College Cork, and the University of Salamanca.

“As Research Scientist at IngreDiZymes, my work focuses on advancing the discovery and development of innovative bioactive ingredients through the integration of computational biochemistry, food science, and natural products research. I hold a PhD in Drug Research, Development and Control from the University of Barcelona and have over a decade of international research experience across Argentina, Spain, and the United States.

My expertise centers on elucidating the molecular mechanisms of natural bioactive compounds, with a particular focus on enzyme–polyphenol interactions, molecular modeling, and the sustainable valorization of agro-industrial by-products. This multidisciplinary background enables me to bridge computational research with ingredient innovation, contributing to the development of scientifically validated, enzyme-based solutions that support IngreDiZymes’ mission of transforming natural resources into high-performance functional ingredients.”

Begoña Muguerza

Scientific Advisor, Co-founder, PhD in Sciences

“As Co-Founder and scientist, I lead IngreDiZymes with a strong commitment to scientific rigor, innovation, and sustainable biotechnology. I hold a PhD in Sciences from the University of Navarra and have over 10 years of experience leading R&D projects in international food companies focused on functional foods and ingredients.

I am currently a Full Professor at the Department of Biochemistry and Biotechnology at Rovira i Virgili University (URV), where I lead the Nutrigenomics Research Group. My research focuses on bioactive compounds—especially polyphenols and bioactive peptides—and their effects assessed through preclinical studies and human intervention trials. I also coordinate the PhD Programme in Nutrigenomics and Personalized Nutrition and direct the Uriach Chair of Nutraceuticals.

With more than 150 publications, 15 patents, and the supervision of 10 PhD theses — including 8 international and 1 industrial — as well as extensive experience in preclinical and human intervention studies, I bring scientific rigor, industry knowledge, and strategic vision to IngreDiZymes. My role is to translate cutting-edge research on bioactive compounds into high-impact, science-based ingredient innovation that drives the company’s growth and technological development.”

Miquel Mulero

Scientific Advisor, Co-founder, PhD in Molecular Biology

“As a molecular biologist and Co-founder of our company, I bring more than 15 years of experience in molecular biology, nutrigenomics, and circadian physiology to drive IngreDiZymes’ scientific strategy and the development of high-impact functional ingredients. My work focuses on how bioactive compounds and biological rhythms modulate metabolism, inflammation, and oxidative stress-knowledge that strengthens our innovation pipeline and supports the validation of our enzyme-based technologies.

I have authored 82 publications, received over 3,100 citations, and hold an H-index of 28. My career includes contributions to mitochondrial signaling, oxidative stress mechanisms, and (poly)phenol research, as well as collaborations across Europe and North America. I have supervised 7 PhD theses and received multiple awards for scientific and teaching excellence.

My goal is to translate advanced research into real solutions that benefit industry, consumers, and the future of health-focused biotechnology.
I guide our scientific strategy to ensure every ingredient we create is validated, innovative, and aligned with the highest standards of quality.”
